Healthy Snack Recipe: NTC Protein Balls

You may have seen on my Instagram a couple of weeks ago that I went paddle boarding with Nike at the London Aquatics Centre and it was awesome! It was so great seeing lots of friendly faces from the Sark Island trip last year.

Anyway, before we took to the water, the lovely Zoe Stirling (CPRESS Juice Nutritionist) shared her favourite healthy snack recipe. Nike really do think of everything! The recipe for Zoe’s protein balls couldn’t be easier and are perfect to give your body what it needs after exercise.

Here’s how to make 3 balls:

1 tablespoon hemp protein

1/2 teaspoon matcha green tea

1/2 teaspoon cinnamon

1 teaspoon coconut oil

2 tablespoons ground buckwheat

1 tablespoon sprouted buckwheat groats

1 tablespoon goji berries

2 teaspoons honey

1 heaped tablespoon Meridian peanut butter (or any nut butter you have in the cupboard)

Dessicated coconut to cover

METHOD:

Mix all of the dry ingredients together, then add the wet ingredients. Once thoroughly mixed you’ll need to get your hands dirty to mould the mixture into three balls. Once you’ve made them, pop them in the fridge for at least 30 minutes while you workout.

Enjoy them with a fresh green juice after a workout and you’ll feel on top of the world!
