Easy Coconut Water Chia Seed Pudding Recipe

Before I get into the details of this quick & easy chia seed pudding recipe, I wanted to go through some of the benefits of these little wonder seeds. No doubt you’ve heard people talking about chia seed pudding and have seen photos of the gooey mixture, but let’s just take a moment to appreciate it.

Two tablespoons of chia seeds provide approximately 4g of protein, 5g of Omega 3 fatty acids (food for your brain), 250mg of calcium (for luscious hair and strong nails) and 10g of fibre. And if that hasn’t persuaded you, chia seeds are said to have twice the potassium of bananas, three times the antioxidant power of blueberries and three times the iron of spinach. Oh and on top of all that, chia seeds hold 9-12 times their weight in water and do exactly the same in your tummy so they are both incredibly nutrient-rich and make you feel fuller for longer.

As part of Team Zico I’ve put together a recipe of how make two large portions of chia seed pudding…

INGREDIENTS:

2 cups of Zico coconut water

2/3 cup of chia seeds

1/2 teaspoon of vanilla extract

1 tablespoon of maple syrup or honey

Top with desiccated coconut & blueberries or raspberries

METHOD:

Blend the coconut water, honey and vanilla extract on a low setting and then add the chia seeds. After about 30 seconds pour the mixture into a large container (or two smaller containers for portion control!) and refrigerate for at least 30mins. Top with desiccated coconut and blueberries and then enjoy.
